Pea & Carrot Hearty & Tasty Soup

Tasty soups are awesome in Winter!

Winter is just around the corner and it’s about now that my love of fresh and tasty salads get’s replaced with warming and yummy soups.

I’m not a fan of watery soups, especially when I want something that is going to fill me up, help me to feel satisfied and be super tasty at the same time…

This is why I’ve come up with this recipe, Carrot and Pea Hearty Soup.

Here’s what you need:

• 2 Tablespoons butter

• 1 Onion, peeled and chopped

• 4 Carrots, peeled and chopped

• Salt & pepper to taste

• 4-5 Cups of chicken or vegetable stock

• 2 tablespoons greek yoghurt

• 2 Tablespoons fresh mint, chopped

• 1 Freshly squeezed lemon (juice only)

• 4 cups green peas

Here’s how to do it

Melt butter in a pot or Dutch oven over medium heat.
Add the chopped onion and cook for about 5 minutes, until they start to look golden and soft.
Add the carrots and cook for another few minutes. Season with salt and pepper.
Add 4 cups of stock of your choice. Bring to a simmer and cook until the carrots are tender, about 10 minutes. Add the peas and cook for a further 10 minutes.
Remove from heat. Add the Greek Yoghurt, lemon juice and 3/4 of the chopped mint and mix by hand.
Let the soup mixture cool – very important!! If you place boiling hot liquid in a blender it will explode and burn you, as I once learnt the hard way 🙁
Once cooled, carefully pour the mixture into a blender. Puree until smooth (add a bit of water if it’s too thick).
Garnish with the leftover chopped mint and an optional light drizzle of olive oil.Serve warm and enjoy!
