
I have to admit, I do love a Bounty… They are little gems of coco-nutty goodness!
Today I wanted to make it my mission to create a sweet treat that was going to be healthy and satisfy my Bounty craving with ingredients full of flavour and goodness.
So here is my attempt at bringing a full of fat and sugar Bounty to life in a healthy light.y.
Karen’s Bounty Bites
Recipe makes 12-15 Bounty Balls
Ingredients
2 1/2 cups desiccated coconut
1 cup of shredded coconut
1/2 Cup chopped walnuts
1/4 Cup coconut oil
1/4 Cup rice malt syrup
1 Teaspoon vanilla essence
A pinch of salt
180g Dark chocolate – for melting
Method
Place the desiccated coconut along with walnuts and a pinch of salt.
Mix the coconut oil, rice malt syrup, vanilla together then add the desiccated coconut mixture.
Stir all ingredients well.
Place in the fridge for approx 30 minutes to firm up the mixture.
Remove from fridge and form small balls by rolling with your hands.
Pop back in the fridge to set a little more.
Heat a non stick pan, add the shredded coconut and shake to stir constantly until lightly browned.
Melt the chocolate in a bowl, then roll the set balls in the melted chocolate followed by tossing them in the toasted coconut.
Place balls back in the fridge to set completely and enjoy after about an hour.
